BILIARY AMYLASE IN THE DOMESTIC FOWL

The bile of the domestic fowl contains an amylase which is secreted by the liver. Its optimum hydrogen ion concentration is similar to that of pancreatic amylase. The amylolytic activity of pancreatic juice was found to be 10-800 times that of bile.
